I had the same experience as your grandfather when I first moved from PA to NYC. I was 20 at the time and didn’t know there was another word for scolapasta.

Hey Lisa,
I actually leave the eggplant in or near the sink overnight. There is no danger of it going bad, salt is a natural preservative – but if you feel more comfortable leaving it in the fridge, please remember to place a pan under it to catch all the liquid. Otherwise you are going to have a bit of a mess to clean up in the fridge!!

Grazie mille!Che ricetta fantastica e simplice! I love garlic so when I steamed the asparagus I cooked the garlic with it and then pureed it all together. YUM!
