I actually leave the eggplant in or near the sink overnight. There is no danger of it going bad, salt is a natural preservative - but if you feel more comfortable leaving it in the fridge, please remember to place a pan under it to catch all the liquid. Otherwise you are going to have a bit of a mess to clean up in the fridge!!
